HISTORY :

During the second world war, a large number of Chinese people living in the Hunan Province migrated into Northern Thailand, Introducing this curry paste which has become part of the local cuisine. Due to the herbs used, this curry is fragrant and salty, sweet, creamy and a little bit spicy. It's a coconut milk, soup-like dish similar to yellow or massaman curry but with a thinnner consistency.

HISTORY :

The name "green" curry derives from the color of the dish which comes from green chilies. The "sweet" in the Thai name (wan means "sweet") refers to the color green itself and not to the taste of the curry. As this is a Thai curry based on coconut milk and fresh green chilies, the color comes out creamy mild green or, as this color is called in Thai, "sweet green". Its ingredients are not exactly fixed. The curry is not necessarily sweeter than other Thai curries but, although the spiciness varies, it tends to be more pungent than the milder curries. Green curry was invented during the reign of King Rama 6 or Rama 7 between the years 1908-1926.

HISTORY :

Stir-in sauces are a popular element of Thai cuisine. Pad See Ew is a Chinese-influenced sweet stirfried noodle dish. The white, broad rice noodles used in Pad See Ew are called 'kuai-tiao sen yai' in Thai and are commonly abbreviated to 'sen yai', meaning "big strip".

HISTORY :

This curry paste originates from the Ngeaw people of Burma. During the war with the Burmese, the Ngeaw people fled to Thailand to escape persecution and thus introduced this paste to Thailand. This thin red curry with a salty, sour, and spicy flavour has since become a favourite among locals in Northern Thailand.
