Kao Tan is a traditional dessert from the northern region of Thailand. A tasty way to preserve leftover rice, these rice-crackers were initially popular during festivals such as Songkran (Thai New Year) and merit ceremonies. Made from steamed glutinous rice mixed with sugar cane juice, then dried and fried, Kao Tan is now an extremely tasty everyday snack.
